– 4 salmon fillets, each about 150g
FOR THE CRUST:
– 30g fresh white breadcrumbs
– 2-3 tablespoons freshly chopped parsley
– 2 tablespoons freshly grated Parmesan cheese
– 2 tablespoons olive oil
– baking sheet, lined with baking parchment
1. Set the oven to 190C or Gas Mark 5. Place the salmon fillets on the lined baking sheet.
2. Mix together the ingredients for the crust and season with salt and freshly ground pepper, then press on to the tops of the salmon fillets.
3. Bake the salmon for 15-20 minutes, or until the crust is a light golden colour. Serve immediately with new potatoes and green beans.
