Crostini with Tomato Salad and Scrambled Egg

• 1 small ciabatta loaf, cut unto 3 chunks
• 4 large plum tomatoes, cored and roughly chopped
• 2 tablespoons extra virgin olive oil
• salt and freshly ground black pepper
• a few sprigs of flat-leaf parsley
• 4 eggs
• 3 tablespoons of milk
• 15g butter
• 50g can anchovy fillets, drained
• rocket salad, to serve
1. Slice each piece of ciabatta in half and toast the bread on both sides.
2. Meanwhile, put the chopped tomatoes in a bowl with 2 tablespoons of the oil, seasoning, and some torn parsley leaves.
3. Beat the eggs and milk together in a bowl. Melt the butter in a small pan, add the eggs and cook over a medium heat, stirring occasionally to scramble them. Drizzle the toast with the rest of the oil. Spoon some tomato salad over and them some scrambled egg. Arrange strips of anchovy fillets on top and sprinkle with ground black pepper. Serve with rocket salad or other leaves, if you like. Not suitable for freezing.
