Ingredients:
- 250g dried Somen noodles (thin Japanese noodles)
- 30ml soy sauce
- 30ml oyster sauce
- 30ml soybean paste (optional, available at Chinese stores)
- 5ml cornflour or tapioca flour
- 60ml peanut or sunflower oil
- 4 cloves garlic, crushed
- 2 sticks celery, sliced
- 200g green beans, sliced lengthways
- 250g portabellini mushrooms, sliced
- 200g bok choi, sliced into three
- 3-4 dried red chillies, sliced in half lengthways (optional)
- bok choi flowers or micro herbs, to garnish
Preparation:
- Cook the noodles in boiling water for about 4 minutes until just tender. Drain.
- Mix the sauces, soybean paste, cornflour, and 120ml water together in a small jug.
- Heat a wok or large pan over a high heat. Once the wok is very hot, add the oil then the garlic. Stir-fry for 20 seconds, then add the celery, green beans, mushrooms, bok choi, and chillies. Stir-fry for about 3 minutes.
- Add the sauce mixture. Stir until slightly thickened. Remove from the heat and serve spooned over the cooked noodles. Garnish with bok choi flowers or micro herbs.
