Cream and Bread Pudding

serves: 6

ingredients:

–       2 cups (500ml) milk

–       1 cup (250ml) caster sugar

–       4 eggs

–       1/4 teaspoon (1 ml) salt

–       1 teaspoon (5ml) vanilla essence

–       12 slices white bread, crusts removed and cut into small blocks

–       2 apples, peeled and grated

–       1/2 teaspoon (3ml) cinnamon

–       3 egg whites

–       1/2 cup (125ml) caster sugar

preparation:

1. Preheat the oven to 180°C and grease a baking dish. Beat the milk, caster sugar, eggs, salt, and vanilla together.

2. Toss the bread blocks and grated apples together and place in the baking dish.

3. Pour the egg and milk mixture over and sprinkle with cinnamon. Place the baking dish in a bigger bowl filled with water (enough water to reach halfway up the baking dish) and bake in the oven for 20 minutes.

4. Then beat the egg whites until they form stiff peaks. Add the sugar spoon by spoon, beating constantly until the mixture is glossy and thick.

5. Remove the bread pudding from the oven and place the egg white mixture on top. Return to the oven for 25 – 30 minutes until it is golden brown.

6. Serve with custard.
